Purple Cauliflower Soup

I bought purple cauliflower once before.  As soon as I cooked it turned white.  I expected the same out of this one that I picked up at the farmer’s market, but it stayed purple all the way through.  It was pretty good, though my favorite part is the cheese toast that accompanies it.

    That happened with purple potatoes for me too. I was very disappointed. I think I would like (naturally) purple food.

    Very cool! I’ve had purple potatoes before (which did stay purple for me when roasting) but never cauliflower. Love how it looks (and the cheese toasts sound good too).
